Die österreichische Regierung hat es sich zum Ziel gesetzt, durch das „Netzwerk Kulinarik“, Österreich als die wichtige Kulinarik-Destination Europas bekannt zu machen. Kulinarische touristische Erlebnisse sind eng mit dem Angebot regionaler und traditioneller Spezialitäten verbunden, weswegen diese eine wichtige Rolle für die Bewerbung kulinarischer Reiseziele sowie deren Positionierung spielen. Die Vernetzung der Bereiche Landwirtschaft, Tourismus und Gastronomie gilt dahingehend als prioritär. Im Zuge der Digitalisierung, ergibt sich ein erhebliches Potential, die Bewerbung Österreichs als kulinarisches Reiseziel zu intensivieren. Ziel der Arbeit ist es, Faktoren zu erörtern, die für die (digitale) Vermarktung von regionalen Lebensmitteln und kulinarischem Tourismus in Österreich relevant sind. Eine kombinierte PEST- und SWOT-Analyse wird angewendet, um mögliche Stärken, Schwächen, Chancen und Herausforderungen zu erörtern. Eine Status-Quo-Erhebung von kulinarischen sowie touristischen Initiativen im internationalen Umfeld und ein Kriterienkatalog des online Auftritts 10 ausgewählter Best-Practice-Beispiele, dienen dazu, Entwicklungsmöglichkeiten aufzuzeigen. Interviews mit Experten aus den Bereichen Landwirtschaft, Kulinarik, Tourismus, Gastronomie und Handel dienten als Grundlage für die Ableitung von Strategie- und Maßnahmenempfehlungen. Die Ergebnisse zeigen, dass Österreich aufgrund des vielfältigen Angebots von traditionellen, authentischen und regionalen Angeboten großes Potential hat, den kulinarischen Tourismus und somit auch die heimische Landwirtschaft zu fördern. Auf Bundes und Länderebene braucht es dahingehend eine vernetzte Zusammenarbeit sowie die Bildung regionaler Wertschöpfungsketten. Der Aufbau einer Onlineplattform und die Forcierung von Online-Marketing Strategien stellen dabei einen Schlüsselpunkt dar. | Abstract in Englisch: | Culinary tourism is becoming increasingly important and the demand for regional food is growing steadily. The Austrian government has also set the goal of promoting Austria as the most important culinary destination in Europe with the support of the networking and action agency " Netzwerk Kulinarik" (Culinary Network). Culinary tourism experiences are closely linked to the offer of regional and traditional specialities, which is why they play an important role in the promotion of culinary destinations and their positioning. The interconnection of the fields of agriculture, tourism and gastronomy is considered a priority, as it can also promote the development of peripheral regions. In the course of digitalisation, there is considerable potential to intensify the promotion of Austria as a culinary destination. The aim of this work is to discuss factors that are relevant for the (digital) marketing of regional food and culinary tourism in Austria. A combined PEST and SWOT analysis is applied to discuss possible strengths, weaknesses, opportunities and challenges. A status quo survey of culinary and tourism initiatives in the international environment and a criteria catalogue of the online presence of 10 selected best practice examples serves to identify opportunities that can also be considered for the promotion of Austrian culinary tourism. Guided interviews with experts from the fields of agriculture, culinary arts, tourism, gastronomy and trade also make a contribution to the derivation of strategy and measure recommendations. The results show that there is great potential for Austria to promote culinary tourism and thus also domestic agriculture due to the diverse range of traditional, authentic and regional offers. Networked cooperation and the creation of regional value chains are needed at the federal and provincial levels.
